Porcupine Meatballs....

First off, Lexi is going back to school today....YAYAYAYAYAY!!!! Thank you so much for all your well wishes and the virtual chicken soup (thanks Ramona) sent to her.♥ Anyway, I thought I would share a recipe with you that we had last night. It is good and easy. We just added green beans and cornbread with it for a yummy meal.
Porcupine Meatballs

Combine 1 package beef Rice-A-Roni with 1 pound ground beef and 1 egg, beaten. Shape into small meatballs (approx. 20). Brown on all sides in skillet. In another bowl combine contents of beef seasoning packet with 2 1/2 cups hot water. After meatballs are browned, pour over meat and bring to a boil. Reduce heat, cover and simmer for 30 minutes. Enjoy! Hope you all have a wonderful weekend. I know a lot of ours will be spent catching up on the school work from the past week.

Oh, my goodness, Darlene! Brittany had dinner over at her boyfriend's house about a month ago and his mom made Porcupine Meatballs, which I'd never heard of. Brittany bragged and bragged about how good they were! Now, I can fix them for all of us! Can't wait to give them a try! Such great news about Lexi!

I'm so glad Lexi is able to go to school today. YEA!! I bet she will be weak but will regain her strength fast. The meat balls look wonderful and my sugarplums would love them. Have a good weekend.

Hi Darlene! Oh, I'm so glad to hear Lexi was able to go back to school today! Did I hear a Yay in your yays! :) I remember how tough it was on me when the kids were sick and at home. You feel so much for them and try so hard to get them well again.
Now your dinner looks and sounds great. I'll have to try this.

So glad to hear that Lexi is going back to school. Kelsie is home until Monday. So far Kayla hasn't gotten sick and I'm praying hard that it stays that way.

Great news about Lexi....our daughter is back to teaching at school today as well.

I forgot all about Porcupine Meatballs! My Mom used to make delicious. And, it makes the house smell soooo good. can send me a virtual meatball....after all...what are friends for! :)

Hi girl! I'm glad Lexi is feeling better. She was sick for several days. My husband and I have both had a semi stomach virus this week. Ick!

Those meatballs look delicious and I know they would go over well here. I've heard of those before but haven't ever seen the recipe. Thanks!

I remember eating porcupine meatballs in grade school and they were so yummy! Out of all the school lunches this is one I remember, they were so good.
Glad to hear Lexi is better. Fern's son Logan is sick and we are wondering if it could be H1N1. It's scary.

Looks yummy! So happy to hear Lexi is better. Well, my son has never called me to pick him up from school because he was sick (he's in 8th) until yesterday. Started out 99.4 fever, sore throat, thought he was going to throw up and a headache. Worse today with a 101.5 temp. I did talk to the doctor yesterday and he didn't seem too concerned. This mama is worried. Hopefully he will be feeling better soon. Fern

That recipe sure brings abck memories! My Mama used to make porcupine balls all the time when we were growing up. She made them huge and rolled them in rice and then baked them in a deep casserole with herb-tomato sauce & topped with shredded cheese. I recall that they also had rice in them too. I basically use the same recipe for stuffed peppers and cabbage rolls. YUM!

glad that lexi is back in school. hopefully this h1n1 will be easy to treat. the meatballs look good. i have never seen them with rice a roni just rice, this however sounds much better, i'll have to try the recipe! thanks

Sorry to read that Lexi has been ill, but so glad to find out she recovered and is back in school! This flu stuff is really scary. A friend and I went to a huge holiday sale today (put on by the Jr. League). There were zillions of crazy women (and a couple of men!) shopping in very close proximity. All I could do was cringe every time I head a sneeze or a cough. There were huge bottles of hand sanitizers everywhere. :)

Those meatballs sound so much better than the ones I make using 99% fat free turkey---it just seems WRONG to make meat balls out of turkey! :)

Hope you're staying's freezing here in KC. Tomorrow is supposed to be lots better!

Gotta get to work on stuff for my next sale!!

Hi Darlene, Poor Lexi. I am glad she is alright now. I am sorry I have missed a couple of your posts. I have company until next Friday and busy is an understatement.

Your meatballs are easy and they look delish. I admit to using frozen meatballs a lot. I used to make them by hand but not for a long time. These are easy and I will try them. I like April's recommendation as well.

Did I mention three of my grands had the Swine flu? They are all fine. That is such a worry.

I have never heard of Porcupine Meatballs. I am sure my husband would love to try them. He always treats himslef to meatballs when we go to IKEA!

Those sounds so yummy! My granny makes some like that w/ just regular rice, but these sound really easy!
