Tasty Beef Stew and Another Cross Country Meet...

The other day when it was so cold outside I thought stew sounded good, so I went online and found a Martha Stewart recipe here. I did mine in the crock pot. Here it is first thing in the morning and ready to slow cook.
Yum, it looks good doesn't it!
It was fabulous and we had left-overs for several days. Try it you will like it!
Lexi had another cross country meet. It was on Monday (so she had to miss dance) and it had been re-scheduled from a rain out. It was almost rained out again. The course was wet, muddy and very slippery but they had them go ahead and run.
Here she is coming in on the final stretch.....the finish line is approximately 50 yards away. Can you see the mud?
Can you tell what place she came in?
Yep, third place (out of 34 runners). A 6th grader came in 1st place and she was actually 2nd place out of the 5th graders and again 1st place from her school! YAY Lexi!
Since the conditions were worse, their times were worse, but Lexi's time was still 7 minutes 21 seconds. Here is the ticker tape with her time.
Hope you are all having a wonderful day. Fall break for Lexi is Thursday and Friday. We aren't doing anything special, but she is just glad to be out of school for two days.

That stew looks so good! I need to copy that recipe. My guys would love it but it wouldn't last us several days. Ha

We have A.J. from Tue - Sun. I hope we get to dry out some while he is here.

I can't believe y'all are even able to have a cross country meet. It hasn't stopped raining here in 7 days...well I think there was one day in there that it didn't rain! I'm losing my mind. OK. That's enough griping.

Your stew looks so good. I love it when something cooks all day then you come home and the house smells good and dinner is ready.

Hello Darlene, I was so busy yesterday I didn't visit much at all. My cousin keeps me running the roads. We are having great fun.

The beef stew looks awesome. When my children were young, I was a crock pot queen. I love cooking soups and stews etc. Especially when the weather turns cool. Today it is 51 here. AND RAINING AGAIN! We are heading out to a craft fair today. (inside of course)

Hurray for Lexi. She is a star in all she does. I love reading about her accomplishments Darlene. You definitely have bragging rights. BIG smile.

I love crock pot cooking...its so nice to put something on to cook in the morning, and when supper time rolls around, no worries, its done! I use mine a lot!

Lexi looks like she's flying along that course despite all the mud. Wouldn't it be fun if she could meet April's Brittany who is also a great cross country runner? Maybe someday..

The stew looks delicious. I love the crockpot because the house smells so good all day long. Perfect dinner for a cold rainy day.

Lexi did fabulous in her meet. Third place...good for her! I used to love track meets when I was her age and I was really good at it also. I used to outrun the boys my level and one up....wish I could still do that..well not outrun men...*lol*..but you know..
