Random Stuff (Spring, Snow, Burlap)....

I have had Spring on my brain the past few days, so I changed my big outdoor wreath to reflect it.  Oh look, it seems the Easter Bunny has already left some eggs there for safekeeping.♥ 
It looks like we may have more of this though today, and maybe again on Sunday night or Monday.
Also, I finally did a little makeover project.  Some of you might remember this little footstool I found at a garage sale last summer.  I re-covered it with burlap.  LOVE it!

Menu for Feb. 22 - 28 and Reviews from Last Week...

Be sure to visit I'm an Organizing Junkie for hundreds of other menu plans for the week.  Here is our menu this week.  For some reason this week I was having a hard time coming up with what I wanted to cook.  Reminder blue names are linked to a recipe.

  • Monday - Crockpot Chicken, mashed potatoes, green beans (In case you notice we have this a lot on Mondays, it is because it is our BUSY night and I have to have something made that Lexi will eat plenty of.  I pick her up from school, we come directly home for her to eat.  Then she has her theater group and dance from 4:00 p.m. to 7:15 p.m.  After that, home for homework, shower and bed.) 

  • Tuesday - Taco Casserole (from freezer prev. made meal), cornbread

  • Wednesday - Fish Sticks, corn, carrots

  • Thursday - Parmesan Chicken Fingers, scalloped potatoes, baked beans

  • Friday - Slow Cooker Beef Stroganoff (new recipe), Steamers-Broccoli, cauliflower, carrots in cheese sauce

  • Saturday and Sunday - leftovers and/or out to eat 
Reviews of my new recipes from last week.

Our Perfect Zesty Chicken Tortilla Bake - We liked them.  They had a "different" taste from the Miracle Whip (the zesty part) but were very good.  I would also use more chicken chunked up.

Catalina Cranberry Chicken - It had a good flavor that was even better the next day.  Lexi ate a whole chicken breast (I just had to scrape off the chunks of cranberries).

Cheesy Green Bean Casserole - Good, but I didn't like the green beans I used.  They didn't have french style in my store and I didn't like the taste of the ones I bought.   I will try it again using different green beans.

Cinnamon Pull-Apart Bread (Monkey Bread)....

Lexi had a friend spend the night last night, so this morning I thought it was the perfect opportunity to try this recipe.  It has always been known to me as Monkey Bread.  This recipe is from the Kraft foods website and is simple, SIMPLE. 

All of us agreed it is DELICIOUS and a keeper.  The web site isn't wanting to pull up this morning so here is the recipe below.  I didn't "frost" mine because I didn't think the girls would like the cream cheese frosting (and they didn't).  But, I made it and just put it in individual bowls for Alan and I to dip in.  For the girls, I made a simple drizzle glaze (1/4 C. powdered sugar and 2 tsp. milk - mix well) that they used.  Also, the recipe says to sprinkle any unused cinnamon/sugar mixture over the top.  I read the reviews and people said it got too crunchy/done so I just sprinkled a small amount of my left-over mixture.  Next time I will sprinkle some of it around as I am putting the dough quarters in the pan.  I also put my cinnamon/sugar mixture in a large baggie (instead of a bowl) to coat the pieces of biscuit dough (easy).      
This will definitely be made again, but only for special occasions or holidays.  DELICIOUS!

Mama Kitty.....

I haven't shown Mama Kitty in a while so I thought I would share some pictures of our outdoor kitty.  She is sooooooo sweet and you can read her story here.  She is now well fed, loved and stays in our garage (in her plush, warm kitty beds) at night and any time she wants.  I'm sure glad "she" adopted us!♥

  • Monday - McCormick One Dish (Seasoning Packet) Salsa Chicken and Rice, broccoli with cheese sauce
  • Tuesday - Kiwanis Pancake Dinner (fundraiser for Kiwanis)
  • Wednesday - Our Perfect Zesty Chicken Tortilla Bake (new recipe), refried or black beans, chips and dip
  • Thursday - Zatarains Red Beans and Rice with Kielbasa, biscuits (from menu two weeks ago, we had leftovers instead of this)

Review of my new recipes from last week's menu.

Ultimate Chicken Fingers - Delicious!! Lexi ate a big helping for dinner and ended up eating the rest later on that night. I love these chicken fingers (and the Parmesan Chicken Fingers reviewed previously) because they are baked and very tasty.

Velveeta Beef Enchilada Bake - I really expected to love this, but I thought it was just alright. I did enjoy it though as a filling in "real" enchiladas. I warmed up leftover corn tortillas and filled them with the warmed up Enchilada Bake, melted some Velveeta cheese on top and put a dollop of sour cream and some Picante. DELICIOUS this way.

Slow Cooker Caramelized-Onion Pot Roast - Delicious! Easy and a wonderful flavor. Lexi loved it too. We also had french-dip subs with the leftovers.

Happy Valentine's Day

Update: As of about 11:10 a.m. it has started snowing. I don't think it is supposed to be much or stick but we will see......... It snowed for a couple of hours, gave us a light dusting and melted all away.

It's Snowing Again.....

Update: Friday morning....hard to believe, but school was NOT canceled. All of the other districts around us did cancel....not ours! When I backed out of my garage I was spinning my tires trying to get traction (we are on a little hill), so 4 wheel drive to the rescue. It was the first time I have used it and it easily got me out of the driveway and out of our neighborhood. The main streets were fine as our temps. stayed a bit higher than they had been and it is either clear and dry or a bit slushy.
Yep, it is snowing again today. This has happened in the last 3 hours. Predictions in our area (for today's snow) were for 1 - 3 inches last night. Then this morning, revised to 3 - 6 inches and on the news just now it is 4 - 8 inches. It is huge flakes and beautiful and still falling!

Sadly, there will be no Daddy Daughter Sweetheart dance tonight and I bet there won't be school tomorrow. They are in school today, and now I'm sure Lexi can't wait to get home to play in the snow.♥

Circle the State with Song.....

Last Saturday, Lexi had her Circle the State with Song "select" choir performance. There are approximately 13 schools in the region that our district is in, and the music teachers from each school pick the students to participate in this "honor" choir program. The ages are from elementary to middle/junior high school. The youngest our school (maybe all the schools) picks is 4th grade and Lexi was in this choir last year also. I have put a heart around Lexi in each collage picture so you can locate her. (Remember all pictures can be clicked on to enlarge.)

This is the write up on this year's Conductor, Cristi Miller. The children already have the music and have practiced at their respective schools, but the morning of the performance they arrive at 8:00 a.m. to start practicing as the big group. The Conductor (and helpers) work with the group all day long, getting their performance ready for the 3:00 p.m. concert and it was a packed house. Lexi said she was wonderful and fun. Here are the songs they sang. Nothing is as sweet as listening to young children singing. It was wonderful.

Here is a link to watch a video of The Duel. Alan was trying to hold the video at the back of the auditorium and was moving quite a bit, sorry. This was a light hearted, fun song they sang. When watching the video, the little girl on the right of Lexi is one of her friends and watch all of her expressions. Too cute!

Review of my new recipes from last week's menu:

Taco Casserole - What can I say but DELICIOUS! It might be one of my favorite recipes so far! I used what I had for a couple of ingredients. It asks for Bow Tie pasta and I used wide Egg Noodles and for 1 can of diced tomatoes I had diced tomatoes with garlic and onion. Lexi ate the noodles out of it.

Pizza Biscuit Bake - Lexi wanted to review this recipe for you and says it is DELICIOUS! She ate a HUGE bowl of it. I, on the other hand, thought it was just alright. We will keep it though, because Lexi loves it and I'm sure will ask for it again.

Playing Basketball.....

Lexi is loving playing basketball again this year. It's a high energy game and she has high a perfect fit! They don't play many games in the season and we have already had three cancelled due to weather. They will start making up the games later this month.
On Saturday Lexi will have a choir performance called Circle the State with Song, and I will show you pictures next week (probably Wednesday since Monday is Menu Day). Hope you all have a great weekend.♥

My Valentine Decorations.....

I thought I would share Valentine decorations around my home. First, how about a piece of cake while you are browsing. It is a funfetti cake mix with strawberry whip icing and sprinkles.....YUM!
These are our decorations in the living room and there are a few more from a previous post here.
This is in the hall on top of the small cabinet. I made the little Love box last year.
This is the best thing ever and Lexi absolutely LOVES it. I saw it on several blogs last year and we have adopted the tradition. We have a little metal mailbox for each of us. I didn't even decorate them. Each day I put a little treat (ex: gum, pencils, notes, candy, stickers, etc.) in Lexi's mailbox and about every other day in Alan's. Lexi also has some treats that she gets to put in my or her daddy's mailbox. She also writes little notes or makes hearts or anything else she can think of. She thinks it is so much fun to check for mail (the little flag gets raised if something is put in the box) and has a ball with surprising us, with things in our mailbox. We usually do this from Feb. 1st until Valentine's Day but the instant she saw these come out we had to start.

Next, the review of last week's new recipes:

Chicken Macaroni Casserole - Delicious, definitely a keeper. Easy to make and would be great if you have to take something for a Church dinner, family reunion, etc. I also froze two meals of this, and will let you know how it does when we thaw it, and use it for another meal.

Mini Shepherd Pies - YUM....we loved these and so did Lexi. I will tell you when Lexi likes my new recipes because she is a fairly picky eater. She is enjoying trying these new recipes though.

Salmon Rice Puff - YUCK - we definitely won't be having this again. We mixed in some mayonnaise just to get a portion down and threw away the rest.

Also, when we make recipes that are larger portions, I am starting to freeze portions so we can just take them out, thaw them and have a homemade meal. I saw the trick in a magazine to freeze things flat. The meal freezes and thaws faster and it takes up less space in your freezer. So, from my meal plan last week, I already have 5 frozen meals.
