Menu for Feb. 15 - 21 and Reviews from Last Week....

Be sure to visit I'm An Organizing Junkie for hundreds of menu plans for the week. Here is our menu for this week. Reminder all blue names are linked to a recipe.
  • Monday - McCormick One Dish (Seasoning Packet) Salsa Chicken and Rice, broccoli with cheese sauce
  • Tuesday - Kiwanis Pancake Dinner (fundraiser for Kiwanis)
  • Wednesday - Our Perfect Zesty Chicken Tortilla Bake (new recipe), refried or black beans, chips and dip
  • Thursday - Zatarains Red Beans and Rice with Kielbasa, biscuits (from menu two weeks ago, we had leftovers instead of this)
  • Friday - Catalina Cranberry Chicken (new recipe), Cheesy Green Bean Casserole (new recipe), baked potato

Review of my new recipes from last week's menu.

Ultimate Chicken Fingers - Delicious!! Lexi ate a big helping for dinner and ended up eating the rest later on that night. I love these chicken fingers (and the Parmesan Chicken Fingers reviewed previously) because they are baked and very tasty.

Velveeta Beef Enchilada Bake - I really expected to love this, but I thought it was just alright. I did enjoy it though as a filling in "real" enchiladas. I warmed up leftover corn tortillas and filled them with the warmed up Enchilada Bake, melted some Velveeta cheese on top and put a dollop of sour cream and some Picante. DELICIOUS this way.

Slow Cooker Caramelized-Onion Pot Roast - Delicious! Easy and a wonderful flavor. Lexi loved it too. We also had french-dip subs with the leftovers.

Good morning Darlene. Your menu sounds like an easy week of cooking. Especially pancake night out. LOL. I am proud of you for sticking to your challenge. I am afraid my quilt challenge has been neglected. Bob being here has been so time consuming. He left yesterday and now we are snowed in again. If we don't lose power I will be sewing my heart out and loving it. The applique class is off until winter gives us a break. It will take some time sewing the blocks together. I have sewn a few and now I want to finish.

Always like the reveiws...sounds like some exciting new dishes coming up this week. Is your husband one who likes pretty much of everything? Mine is, so that makes cooking easier.

Thank you for the writeup of your dinners last week. Thats a good way for the rest of us to decide. I will have to try the chicken fingers because they are one of Madeline's favourites. Too bad about the enchillad bake...interesting.

One word ~ Scrumptious! This week sounds delicious...and I love pancakes for dinner...even better that it is a fund raiser.

I have had the Catalina chicken before and it is very good. Tonight we are having left over lasagne and tomorrow meatloaf and cheesy potatoes.....believe it or not Wednesday is Ash Wednesday.

Love-love-love the reviews. Honest and direct--love that. I am so bad at trying new recipes unless I am trying some out for my recipe blog. I should resolve to try a new recipe every week......but I just know I couldn't keep that going. We love Zatarin's here as well. Love kielbasa with peppers and onions-Mmmm.
Keep up the good work. After a while, it becomes second nature to plan ahead. Then you have all the stuff and know what you can or can't do....I NEED my plans...

You're doing so great with your menus, Darlene! However, I'd LOVE to attend that pancake dinner...that sounds like fun! I tried to open the link to the cranberry chick. recipe, but it didn't open. I'm sure it's my ancient and slow computer that's the problem....I'll try again later!

Yummm... your menu sounds wonderful, Darlene! I can't wait to hear your review of the Chicken Tortilla Bake- that sounds like something my Hubby would like.

You're right about the Ultimate Chicken FIngers- they are delicious. I tried them back a month or so ago and Hubby actually asked for them again. (Something he hardly ever does!)
