Menu for Feb. 8 - 14 and Review from Last Week...

Be sure to visit I'm an Organizing Junkie for hundreds of other menu plans for the week. Our menu this week is:
Monday- Ultimate Chicken Fingers (new recipe), mashed potatoes, green beans
Tuesday- Velveeta Beef Enchilada Bake (new recipe), Mexican rice, chip/dip
Wednesday- Tuna Sandwiches and chips
Thursday- Taco Soup (defrosted from a previous meal in the freezer), cornbread
Friday- Slow Cooker Caramelized-Onion Pot Roast (new recipe), carrots, potatoes
Saturday - Leftovers (Roast Sandwiches?)
Sunday - ♥ Valentine's Day

Review of my new recipes from last week's menu:

Taco Casserole - What can I say but DELICIOUS! It might be one of my favorite recipes so far! I used what I had for a couple of ingredients. It asks for Bow Tie pasta and I used wide Egg Noodles and for 1 can of diced tomatoes I had diced tomatoes with garlic and onion. Lexi ate the noodles out of it.

Pizza Biscuit Bake - Lexi wanted to review this recipe for you and says it is DELICIOUS! She ate a HUGE bowl of it. I, on the other hand, thought it was just alright. We will keep it though, because Lexi loves it and I'm sure will ask for it again.

That taco meal looks great and the Velveeta enchilada meal sound so good. Can't wait to hear how they are. Now, you are so smart to be trying something new. I'd be tired of cooking by now. Are you ready for some snow? I hope your day goes well. Stay dry. M

I think it's so cool that you are doing this weekly recipe thing Darlene. We tend to have the same thing over and over for different seasons. You inspire me to try new things, shake it up a bit!

Yummy..My son loves chicken fingers so I am going to have to try these!The pot roast looks really good too.
I cannot eat today and tomorrow due to medical testing so I am having virtual food via blogland and you are my first stop!!
Have you ever eaten at Two Frogs??

Yum. I like the look of that taco recipe. Yum...they both do. I like how you are doing this and keeping us informed. I'm sure a lot more ladies are cooking in their households because of what you are doing! big smile. I heard you may have a 'little' snow....

Hi Darlene, I'm going to have to try some of your recipes! They sound really good and I am in a cooking rut! Need to some ideas! :) Do you find it helps to have the week planned? And do you shop for the week's ingredients at one time, or as the week goes?

My kids are so enjoying the Valentine Treat boxes. So glad you shared this idea. I think they will be sad to see Sunday come! ~hugs, Rhonda :)

Hi Darlene, your menus are so much fun to read and share. Does this plan help you be more organized? I plan my meals by the seat of my pants. However, I always cook a big dinner every night. We seldom go out to eat because I like my cooking better. I am a master of 30 minute meals. I do cook extra food to freeze and serve later. Thus my short meal time.

Lexi is so cute playing basketball. She is one busy little girl. I mentioned our granddaughter Ashley, she also played basketball. Lexi excels in everything she does. I love reading about her and watching her grow up in her photos. I love blogging as it is a journal of our family life and events. Do you agree?

The taco casserole sounds delicious, Darlene! I will definitely have to try that... it sounds like something my Hubby would love.
And the ultimate chicken fingers sound wonderful too... I tried some similar to that once and they were great!

Hi Darlene, thank you for the sweetest comment. You know I love your family and Lexi so much. I think your pets are darling as well, even if I don't mention them often. The poodles are so cute. You know my weakness for poodles. Laughing. Yes, CC is feeling so sorry for herself but she is doing fine. This morning she somehow worked her bottom jaw out of the collar (cone) and I had to take the collar off to fix it. She licked me to death saying thank you. Then of course, she started licking her incision. The collar was put back on but this time I attached it to her leash collar. I don't think she can get her jaw out of it now. LOL!

More snow, oh no. I hope you don't lose power. I still think it is beautiful though.

I want to make your taco bake. we will love it for sure. I am glad your food planning challenge is a success. This week no quilting has been done. sigh!
