Lexi's Final Mini Society and Who Are We Going to See in Concert?

Lexi had her final Mini Society last Friday.  In case you haven't heard of Mini Society go here and see what it is.  This time she sold guitar pick hair accessories.  Single guitar pick bobby pins and clips and three guitar picks on barrettes.  She started out with 58 hair accessories and came home with it was a GREAT sale.
Now for the exciting concert news.  We will have a late night tonight because we will be going to Oklahoma City.  Lexi has been wanting to see her favorite singer for a while and I finally got tickets.  We will be going to see Taylor Swift!!!

I think it is going to be a long, long school day for Lexi today.  She is so excited!  Here is a small snippet (about 17 seconds) of her opening the concert tickets.  She thought the ski trip was her "big" birthday present and I had told her I had just a small package so she could open something.  Click here and enjoy.  Also, we think Midnight lost one of her 9 lives during this

Menu for March 29 - April 4 and Review of Last New Recipe...

  • Monday - Slow Cooked Beef Stroganoff (you know this is a favorite), noodles, green beans and leftover biscuits

  • Tuesday - Grilled Chicken, mashed potatoes, baked beans

  • Wednesday - We are going to a concert (one of Lexi's Birthday Presents).  I'll let you know who later.  Eat out.

  • Thursday - (Breakfast for Dinner) - Ham and Hash Browns (new recipe below), fruit, biscuits

  • Friday - Chicken Soft Tacos (new recipe below), refried beans and/or mexican rice, chips and dip

  • Saturday - leftovers

  • Easter Sunday - Glazed Ham, Pineapple Sweet Potatoes (new recipe below), green beans, cupcakes 
Review of the Tuna Noodle Skillet (from two weeks ago) - I didn't do a picture this time but I won't make it again.  It was just very blah to us and didn't have much flavor.  So, not a keeper here.
This is a picture of my new soft cover cookbook FIX-IT and FORGET-IT 5-ingredient slow-cooker recipes.  This is where all my new recipes this week come from.  
Remember each of these three recipes is for your slow-cooker.
Ham and Hash Browns
32-oz. pkg. frozen hash brown potatoes
2 cups cubed cooked ham
2-oz. jar diced pimiento, drained
10 3/4 oz. can cheddar cheese soup
3/4 cup milk
1/4 tsp. pepper (optional)
1.  Combine potatoes, ham, and pimiento in slow cooker.
2.  Combine soup, milk and pepper (if desired) in a bowl.  Mix well and pour over potato mixture.  Stir.
3.  Cover and cook on low 4 to 6 hours or until potatoes are tender.

Chicken Soft Tacos
1 to 1 1/2 lbs. frozen boneless, skinless chicken breast halves
14 1/2-oz. can low-sodium diced tomatoes with green chilies
1-oz. envelope low-sodium taco seasoning mix
1.  Place chicken breasts in slow cooker
2.  Combine tomatoes and taco seasoning mix in a bowl.  Pour over chicken.
3.  Cover and cook on high 1 hour and then on low 4 to 6 hours.
4.  Remove chicken from slow cooker and chop.  Serve in soft tortillas.  Top with salsa, low-fat shredded cheddar cheese, guacamole, and fresh tomatoes.

Pineapple Sweet Potatoes
10-oz. can unsweetened crushed pineapple, drained
2 Tbsp. dark brown sugar
40-oz. can unsweetened yams, drained
1.  Spray interior of slow cooker with cooking spray.
2.  Combine pineapple and brown sugar in slow cooker.  Add yams.
3.  Cover and cook on low 2 to 4 hours or until heated through.
Tip:  This recipe can be doubled easily.  Just remember to allow extra time for it to heat, perhaps an additional hour.

Angel Fire, Taos, and Tubing....

More Angel Fire Fun.....St. Patty's Day....

Craziness on St. Patty's Day!!  They scooped out a pit and filled it with water for the daredevils.  A snow mobile took snowboarders and skiers up to a point on the hill (roped off) and they came down and tried to cross the water.  We only watched for a short time (it was a LONG walk up a BIG hill) and no one made it.  They were all going into the water.  Firefighters were pulling them out.  They gave out prizes in different catagories once they closed it (the water started leaking out and it got too shallow).  Brrrrr, see how they are dressed (or actually NOT!  I can't even imagine how cold that water was!!

Spring Break at Angel Fire.....

Here is a bit of the house we stayed in at Angel Fire.  The picture is deceiving because it is HUGE.  Five bedrooms, four bathrooms, huge kitchen, den, living room, basement, formal dining (that was bigger than Lexi's room at home) and very nice.  This is Sunday morning at Angel Fire.  I woke up with a migraine (altitude headache) and had to go back to bed, so hubby took Lexi to see where she was going to ski and get her ski equipment.
When I got up later, my headache was bearable and I took pictures from the second story of the house (out VERY dirty windows).  Alan took Lexi out back on the hill to teach her some basics.  Angel Fire was so crowded that that all of the ski school classes had filled up before we even arrived (I heard they were full about two months ago).  So, it was up to us to get her going.  We haven't been skiing in about 28 years so Alan did the best he could.  She caught right on.  The friend she was with has skied for several years so she also helped teach her what to do.     

On Monday, they went to the slopes and practiced a while on the smaller places they could get to.  Once she thought she was ready, it was time for the small ski lift.  This was the first time getting on it and I remember how scary it is.  You can tell by her face she wasn't sure about it at all. She got on it just fine though. 

After that scary first time, she had a BLAST.  No problem at all getting on or off the lift.

This is some of the crowd you have to get through to get into a couple of the ski lift lines.  It was CRAZY crowded.  We were told the snow hasn't been great the last several years.  It was WONDERFUL this year and EVERYONE was there.  They said it was the most crowded in years! 

Lexi took to skiing like a duck to water.  She did FABULOUS and loved it!  Alan and I didn't ski.  First, it was WAY too crowded and second, since we couldn't get lessons we weren't even going to attempt it with the crowd.  Lexi already wants to go again so I think I need to get on a work-out program (to be in better shape) for next year!!

We're BACK.........

Just wanted to pop in and let you know we made it home safe and sound.  We had a BLAST!  Our neighbors are accusing us of bringing the snow home with us.  They said they had 70 degree, sunny temperatures all week.  We headed home in front of a snow/ice storm.  Today, it is spitting snow here and COLD as can be.   Here is a sneak peek from the trip.  I'll be trying to catch up with all of you (during the next few days) and on Monday I will start posting our Angel Fire pictures. I sure missed all of you.♥

We are hitting the road this morning headed on Spring Break vacation to Angel Fire.  We will have a computer with us, but don't know if we will have internet service.  So, talk to you all in a week.♥  Don't forget about me........

Copycat.....the Sincerest Form of Flattery (Making over Miley).......

I had to show you the CUTEST thing!!!!  Rachel at Made with Love and Glue here showed what she did with a Miley Cyrus Wal-mart Clearance dress for $3.00.  I loved it and knew Lexi would love it too, and she did!!!!! (Remember, you can click on any picture to enlarge it.) 
When Lexi got home from school on Tuesday (on our 74 degree day) she couldn't wait to put on her new skirt and do a "modeling" session.  It is really hard for us to find skirts that are cute, small enough in the waist and long enough (without looking "frumpy") for school.  This one is perfect.  The waist is still a bit big, but with a tucked in shirt and the wide elastic, you can't tell.  These dresses are junior sizes and I managed to get one XS and one S.  These are also perfect because Lexi's school colors are black and white, so this will go with tons of things we have.  Again, THANK YOU so much Rachel for posting about this and sharing it with us.

Nifty Thrifty Tuesdays......

I am so ready for our garage sales to start up again to find fun stuff.  I did stop at the local antique/thrift store last week and found these.  I think they will be perfect for ice cream and desserts.  There were five of them (I figured one got broken at some point) and I picked them up for $5.00.  I LOVE them.  They also are fairly heavy glass.

Menu for March 8 - 12 and Review of Last Week's New Recipes.....

Be sure to visit I'm An Organizing Junkie for hundreds more menus for the week.  Here is our menu for the week.  Reminder blue names are linked to a recipe.  I don't have a firmly set menu this week because we will be using up leftovers before leaving on our trip on Saturday March 13.  I kind of got off the menu last week too, though I made everthing, just not on the set day.
*Monday - Leftover Baked Ziti Casserole
*Tuesday - Leftover Meatloaf and Can't Mess it Up Corny Casserole
*Wednesday -Tuna Noodle Skillet (new recipe)
*Thursday - Leftovers (either Baked Ziti or Tuna Noodle Skillet)
*Friday - Depending if everything has been eaten - Grilled chicken, baked potato

Hashbrown Casserole - Delicious, thanks Joanna!
Can't Mess It Up Corny Casserole - Love it.  Very much like one I already make but it has cream cheese instead of sour cream.
Baked Ziti Casserole - Pretty good, I thought it could use a bit more spaghetti sauce (creamier) but Alan and Lexi LOVED it!  It is very much like a simple lasagna but with ziti noodles instead of lasagna noodles. The only thing I did different from the recipe was I added Italian seasoning in the ricotta mixture.

Daddy/Daughter Dance.....

Last night Lexi and her Daddy attended the re-scheduled Daddy/Daughter Dance.This was for all schools in the area and benefited The Reading Room, which is an organization that helps children with reading and comprehension. 
You can tell by the pictures that Lexi had a great time.  They danced, ate cupcakes and took a ride in a limo.  What fun!!
Lexi is out of school today for a teacher workshop so we will just be lazing away.  Hope you all are enjoying your Friday.♥

Excited for a Spring Break Vacation.....

Our plans have been made and we are so excited to be going on a REAL Spring Break vacation this year.  Some friends of ours invited us to go with them toooooooo.........

Angel Fire, New Mexico!!!!!  They have some family that live there (so they go each year) and one of their family's friends has a furnished house that we will get to use for free.  Did you hear that FREE...woohoo.   Also, the year that your child is in 5th grade their ski lift tickets (at Angel Fire resort) are FREE....yep just show a report card and all of their skiing is free.  Lexi is SOOOOO excited.  She has never been snow skiing or anywhere like this.  I am just excited to get away for a relaxing, fun vacation.   We will leave March 13th and probably come back on the 19th.  Are any of you going to be there then???  If so, let me know.....I want to meet you.

* Monday - Shake-n-Bake Pork Chops, hashbrown casserole (new recipe) green beans
* Tuesday - Taco Soup (in freezer left over from previous meal), cornbread
* Wednesday - Macaroni and Cheese with Ham, peas
* Thursday - Meatloaf (a favorite), Can't Mess it Up Corny Casserole (new recipe), pork-  n-beans
* Friday - Baked Ziti Casserole (new recipe), salad, french bread
* Saturday and Sunday  Leftovers and/or out to eat

Review of last week's new recipe.
   Slow Cooker Beef Stroganoff I - DELICIOUS!!!!!  Another new FAVORITE!  Simple, easy and loved it.  Lexi wasn't home Friday night (when we had this), she was spending the night with a friend, but Saturday for lunch she ate a BIG bowl of it and loved it!  Then finished it off with another bowl for lunch on Sunday.  My changes from the recipe are: I seared the stew meat along with the onions before putting them in the crock pot.  I also added a package of dry onion soup mix when mixing up the rest of the ingredients.  You will probably see this on our menu quite often.☺
