Menu for May 24-30, Review and Easy Southern Banana Pudding.....

Be sure to visit I'm An Organizing Junkie for hundreds of menu plans for the week.  Blue names are linked to a recipe.
Review of last new recipe:
Enchilada Casserole - YUM....delicious and the leftovers were fabulous!

Also, my parents were here last week and we cooked some.  Look at this delicious dinner my Dad made one night.  Bell Pepper casserole, squash w/bacon and garlic mashed potatoes....YUM.  Thanks Dad!

After the delicious meal Dad made, my Mom made dessert. So easy and yummy.

2 1/2 cups cold milk
1 pkg (5.1oz.) Jell-O Banana Cream Flavor Instant Pudding
approx. 30 Nilla Wafers
3 bananas, sliced
1 tub Cool Whip whipped topping

Arrange layer of wafers on bottom and up side of 2 qt. bowl: top with layer of sliced bananas, repeat layers 1 to 2 more times.

Mix milk and pudding, then pour over the top of the layers (it will seep right down through the layers).  Refrigerate at least 1 hour.  Serve with a dollop of cool whip
DELICIOUS!!!  Thanks Mom!

Your menu and your dad's dinner sound wonderful! I made banana pudding two weeks ago when we had one of our groups of company. It was delish and didn't last long!

Hey there Darlene.
Never heard of bell pepper casserole. It looks good.
I'm waiting until the Dr.s office is open. Spencer has been very sick.
Believe it or snowed early this morning. Hope we get sunshine later :)
Have a great day!

Your dad's meal looks yummy....and I LOVE that pudding your mom fixed!

It was nearly 90 here yesterday...supposed to be the same today. We have only had a couple of REAL spring days. Winter to Summer....that's the weather! :) At least I did FINALLY get some plants put into pots. Progress....very, very slow progress! L, Dana

The enchilada casserole looks great to me too Darlene. The flavors make it taste even better as leftovers!

I am a big fan of banana pudding--so glad your Mom and Dad were the chefs for your meal--what a treat to get a night off!

Oh, now that brings back such happy memories of my youth! My Mom was always making banana/ vanilla wafer pudding. It was a much simpler time and life seemed so much easier. Ahhhhh, I miss those days.
Menu looks good for the weather they are predicting! 96' here today and soooo humid. Ick!

The Enchilada Casserole sounds like something I used to make. I'll have to look for that recipe! After seeing the Banana Pudding recipe minutes before I took Allison to school, I decided we are having that tonight and stopped at the store for the ingredients! Yummy!

Goodness, Darlene- those pictures made my mouth water!! I'm so disappointed I missed Monday night's meal- grilled cheese sandwiches are my favorite!

Your menu sounds wonderful- I saw you had Chicken Spaghetti for Friday- I tried the Pioneer Woman's chicken casserole (it's actually a baked chicken spaghetti) and I was just okay with it but Hubby loved it. Can't wait to hear how yours turns out!
