Two New Cookbooks and Swiss Steak Recipe......

Thanks for all your sweet words about Lexi's first day of school.  She is LOVING it!  Here are two new cookbooks I bought.  I wanted to still be able to cook, yet stay on my diet and watch my calories. 
I tried a recipe from the Taste of Home Comfort Food diet Cookbook for Swiss Steak.
Can I just tell you it was DELICIOUS!!! 
We had Swiss Steak - 255 calories
Barilla Plus Farfalle Pasta - 1/2 cup serving - 210 calories
Green Beans - 20 calories
Grand Total = 485 calories for dinner
Lexi wouldn't touch it so Alan and I still have another dinner since this serves four.  I can't wait to try more of these recipes and share them with you!

Boy, it looks great. That is funny about Lexi not touching it. Been there and cooked those meals lots of times. Ha Glad school is fun for Lexi. It is somewhat cooler here. Just 99. No rain though or none that measures. Enjoy the weekend.

HA!! I make plenty of meals that my kids won't touch! I know that you have been doing so well on your exercixe program, I wondered if you had changed your diet. That's a hard one for me. I can't wait to see the next yummy recipe!

With Lexi not liking it - she is falling in the same category as so many of the young generation...they are missing out on lots of good tasting meals.

Great that you are still on the diet program.

The food looks delicious! My son used to do the same thing that Lexi did, but most of the time when he would finally try it he liked it. He still won't eat pinto beans, silly boy! HA

Sure looks like a tasty dinner to me.
I've read that our taste changes about every 7 years.
So, who knows, in 7 years this might just be Lexi's favorite dish :)
I remember our daughter gagging on green beans when she was about 4yrs. old. Now, she loves green beans :)

I've never been a big fan of swiss steak - I think it reminds me of what they used to serve in school! Either that or I'm not a big fan of green peppers, and I believe ss has lots of them!

Wow I have not had swiss steak in forever and this looks yummy!!

Hi Darlene, I love that you shared a low cal recipe and I am going to make it with some venison cube steaks we have in the freezer. Your cookbooks look like you are serious about your new eating lifestyle. Good for you. I am taking lessons from you. HA!

Is Lexi a fussy eater? She doesn't know what she is missing. BIG smile.

That recipe sounds wonderful. . . and it would be so easy to reduce the amount of sodium per serving (we watch that). I'm pretty danged sure my kiddos wouldn't have touched it when they were Lexi's age, either. They do get better as they age about what they eat !! :)

Lexi looks adorable in her "first day of school" photos. . .so glad she likes it!! WHERE did the summer go? And why is it still so hot? We've had storms all afternoon and evening!! We had a break early in the evening, so I dressed in my exercise clothes, grabbed my iPod and headed out for a little walk/run workout. About 8 min. into it the heavens opened. . . and I promptly trotted back home. I would have stayed if it was just rain, but it was lightning, too. :(

I can't wait to read more of your recipes. Losing weight is so hard. Keep it up! Glad to see that Lexi had a great 1st day of school. She didn't look nervous one little bit- just beautiful. I love those curly locks!

Our family loves swiss steaks, I make them in the crock pot with organic chicken broth and onions (after searing them in gluten free flour) Everybody always goes crazy over them.

Looks like you have some perfect "doable" cookbooks!

Great that you found 2 super cookbooks to help you with your food choices. I have a couple of great books too I should share those as well. It really helps to do that doesn't it?
It looks soooo delicious. Too bad Lexi didn't like it...wonder what she had instead.

Good for you for keeping up with your "diet"....rather...good food choice lifestyle.
