Worked on the Front bed....

Our weather has been beautiful and I worked in the front bed the other day.  I planted five Encore Azaleas at the back of the bed by the wall.  They will bloom in the spring, summer and fall.  I also planted three boxwoods in the front of the bed.  Then put out more red mulch.  I sure wish all the trees would quit shedding all those seeds.  We can't keep them swept up right now.
I also wanted a little garden angel girl and couldn't make up my mind between three of them.  I let Lexi make the final decision and I think this little angel is ADORABLE!

We are busy as can be and my parents got into town last night.  Lexi is having a ball performing each night.  I'll post a picture and one of their songs as soon as I can.  Hope you all have a wonderful weekend.  We are supposed to get some rain.  That's alright because we need it.

Yesterday.......

Alan put the new net on Lexi's trampoline.  Her old net was brittle and falling apart with holes all in it. 
While I...........dusted, vacuumed and mopped the floors.

Laundered the kitchen floor rugs and hung them out in the sun to dry.

I snipped off some spent blooms on my Knock Out rose bush. 

I even had enough time to sit out on my back porch swing and read my magazines for a while before the whirlwind AKA Lexi got home from school.
Gotta tell you........Life is Good!!!!

Menu for April 26 - May 2 and Review of Last Week's New Recipe.....

Be sure to visit I'm an Organizing Junkie for hundreds of other menu plans for the week.  Names in blue have a recipe linked or listed below (remember you can click on the recipe to enlarge it).  This menu may not be followed very well this week because Lexi will be in her end of year production (recital) for her Broadway Kids, a song/dance type group.  Wednesday night is the dress rehearsal and they will perform Thursday, Friday, and Saturday night and Sunday afternoon.  My parents were going to come in town this past weekend, but changed to this coming weekend, so they can see her perform. 

  • Monday - crockpot chicken, rice-a-roni, green beans

  • Tuesday - Corny Salmon Cakes (new recipe), mashed potatoes, broccoli with cheese

  • Wednesday - Mexican Cornbread (recipe below), refried beans, chip and dip

  • Thursday - Peach Chicken (new recipe below), pasta, salad

  • Friday - eat out

  • Saturday - Fruited Tuna Salad Pitas ( new recipe below), chips

  • Sunday - leftovers or eat out
Mexican Cornbread (I don't remember this recipe but I have easy & good marked on it)
1 cup grated cheese
2 boxes Jiffy corn muffin mix
1 can cream style corn
1 can diced green chilies
1 can Rotel chilies and tomatoes (reg, mild or hot)
1 lb browned hamburger, drained
2 eggs

Mix hamburger, rotel, green chilies and set aside.  Mix 1 egg, 1/2 can cream style corn and 1 box Jiffy mix (if thick add a little milk).  Spread in 13 x 9 cake pan.  Spread hamburger and cheese over that.  Then mix (again) 1 egg, rest of the cream style corn and 1 box Jiffy mix.  Spread that over the top and bake at 350 for approximately 30 minutes or until golden brown.

Easy Santa Fe Stuffed Peppers - Another one that is not a keeper.  I will stick with our favorite recipe for Stuffed Peppers here.  It takes a while to make but is well worth it.

I was wondering why my bird feeder was on the ground several afternoons when I looked out the window.  Now I know.............

Review of last week's new recipe:
Sausage with Peppers and Pasta - Well, it looks really pretty but hubby and I thought it was very bland. If you decide to try it I think it needs onions and plenty of seasoning. Not a keeper here.

Lexi's Solo Dance Competition.....

Sooooo, you are curious about how Lexi did.  Well, it might have been a disaster.  Lexi was as nervous as I have EVER seen her.  She has been on stage plenty of times, but never dancing solo.  There were 60 entries in the competition.  Solos, duos, trios, small groups and large groups.  She was the 10th performer at 5:06 p.m.  Awards would start at 8:30 p.m. and (at the time we didn't know) everyone would get an award.....no matter how they did.  She was back stage with her teacher and Alan and I went and sat in the audience. It was time........Lexi came on stage and started dancing BEAUTIFULLY when part way through we saw her face go blank, with a scared expression.  She lost her place for about an 8 count!!!!  She did keep moving her arms and moved on stage and almost as quickly as she "blanked" she was back into her dance, looking great.  I knew she was going to be UPSET.  So, I waited just a bit before I went back stage.  She was crying away and couldn't believe she had forgotten her dance.  All of the other dancers were telling her they had ALL done it at some point or another.  Forgotten, fallen, something, and if you perform in front of people and hadn't messed up yet, you would at some point.  It helped but she was still devastated.  Anyway, she changed and we went roaming around the town we were in.
When we returned for the awards ceremony, they had all of the dancers sit on the stage.  It was at this point that we realized everyone would get something.  The acrylic trophies were 3rd place - silver, 2nd place - gold and 1st place - platinum. They handed out trophies in the dance order, so we didn't have to wait long.  They called out Dreams to Dream (the song name) gets........................PLATINUM!!!!  Her dance teachers, all of her dance friends and Alan and I all screamed with joy!  We were all ecstatic!  The biggest thrill for her, was the fact that to perform your competition dance in the recital (in May), you HAD to have platinum.  She did it and will get to perform.  Her teacher said she has never seen a ballet performance get platinum when there was a mistake in the dance, because they are watching the technical details......the rest of Lexi's dance was perfect though.   We are soooooo proud of her, and that she kept it together during her performance, after the mistake.  
 
She is definitely beaming now!  Way to go Lexi!!!!!!!!

We couldn't video at this competition.  But, since she will be in the recital we should be able to video in the rehearsal.  If not, we will video her in her dance studio so you all will be able to see her ballet solo.♥

  • Saturday - Grilled pork chops, scalloped potatoes, peach slices

Review of Ham and Hashbrowns from last week.  I didn't take a picture.  We thought it was just okay.  For leftovers we seasoned it up quite a bit and reheated with shredded cheese and it was pretty good.  I probably won't make it again though.

Taylor Swift Concert Pictures.......

There are a lot of pictures and remember you can click on any collage to enlarge them.  The concert was GREAT!  I enjoyed it as much as Lexi.  She puts on a wonderful, energetic show.  Alan drove us but didn't go to the concert.  He just stayed in one of the restaurant/bars in the Ford Center (where the concert was located).  We went and ate first at Chelinos in the Bricktown area of Oklahoma City, then walked over.  
   There were two back-up bands.  The first was called Gloriana and they were good.  The next was Kellie Pickler, you might remember her from American Idol fame.  Here are some pictures from her performance.  She was really good too.

Then it was time for all of the screaming girls AND boys to get Taylor on the stage.  Hope you enjoy the pictures.  I took a lot.




On the last song, she moved to a spot on the stage and it started raining down on her.  She was soaked when she left the stage.
 
If any of you are thinking of going to see her or have a daughter or son that wants to see her.....it is well worth the ticket price.  Hope you are all having a wonderful Wednesday.♥

Review of last weeks new recipes:

Chicken Soft Tacos - DELICIOUS!!  Easy and a great taste.  This would also be good for a pot luck or get together.
Pineapple Sweet Potatoes - Didn't take a picture.  Not a favorite so I won't be making it again.

On Wednesday I'll show you pictures from the Taylor Swift concert.  For those of you asking about it.....IT WAS FABULOUS!!
